In our finca there are almond, carob and fig trees. All are typical Mediterranean trees but one of them gives the most precious fruit: the almond. Almonds are an essential ingredient in the gastronomy of Mallorca.
Before knowing the almond process, we want that you know this tree flowering and fruit growth during the year. The almond groves are spectacular in February and March. Later, the flowers give way to the green leaves until the arrival of late summer and autumn. We share some images of almond trees during different seasons.
We take care of our almond trees. The most of these trees were planted by our great grandfather. Every winter we prune the almond trees.





After flowering, we can enjoy unripe almonds (in our language, „ametllons“). We loved the „ametllons“ when we were child. You can see these in the next image.

In the end of July, my uncle collects the almonds of our farm. After, we choose the best and remove the outer covering. We put the almonds in sacks to eat during the year.



When we want to eat almonds, we chop with a small hammer (the same that my grandmother used when she did this process).

After, we remove the thin skin of almonds and we put the almonds in the oven. When the color is nice, remove from oven: They are ready to eat.
